A Potato Recipe from My Italian Grandmother

Peel the potatoes (optional) and cut them into small cubes or wedges, about 1-inch pieces for quicker cooking.

2. Sauté the Garlic:

Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant, but be careful not to burn it.

3. Cook the Potatoes:

Add the diced potatoes to the skillet. Season with salt, pepper, oregano, and red pepper flakes (if using). Stir well to coat the potatoes in the oil and seasoning.

Cover and cook for about 10 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside but tender inside. Adjust the heat to ensure they cook evenly without burning.

4. Garnish and Serve:

Once cooked, remove from heat and garnish with freshly chopped parsley for a burst of color and freshness.
