Let It Rise: Place the dough in a greased bowl and cover it with a damp cloth. Let it rise for about 1 hour, or until it has doubled in size.
Roll Out the Dough: After the dough has risen, punch it down to release any air. Roll it out into a large rectangle about 1/4 inch thick.
Spread Butter: Spread the softened butter evenly over the dough. Then, fold the dough into thirds, like a letter, and roll it out again into a rectangle. Repeat the folding and rolling process twice more.
Shape the Pastries: Cut the dough into desired shapes, such as squares, triangles, or strips. Arrange them on a baking sheet lined with parchment paper.
Prepare the Egg Wash: In a small bowl, beat together the egg yolk and 1 tbsp milk. Brush the egg wash over the tops of the pastries.
Top with Poppy Seeds: Sprinkle poppy seeds generously over the pastries for a beautiful, flavorful touch.
Bake: Preheat the oven to 350°F (175°C). Bake the pastries for 20-25 minutes or until they are golden brown and puffed.
