Loaded Air Fryer Potato Skins with Gouda and Veggies

Elevate your snack game with these crispy potato skins filled with ooey-gooey cheese and savory toppings! Perfect for game day or a cozy night in.

✅ Ingredients:
4 medium russet potatoes

1 cup shredded Gouda cheese

4 slices turkey or plant-based bacon, cooked and crumbled

1 tbsp olive oil

½ tsp salt

¼ cup sour cream

2 tbsp chopped green onions

👩‍🍳 How to Make:
1. Preheat:
Set your air fryer to 400°F (200°C).

2. Prep the Potatoes:
Scrub and dry the potatoes. Pierce each one with a fork, rub with olive oil, and sprinkle with salt.

3. Cook Whole Potatoes:
Air fry the potatoes for 35–40 minutes until tender when pierced with a fork. Let cool slightly.

4. Scoop:
Cut each potato in half lengthwise. Carefully scoop out some of the flesh, leaving a ¼-inch thick shell.
