Phenomenal Salad
Ingredients:
For the Salad:
4 cups mixed greens (e.g., arugula, spinach, and romaine)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/2 cup crumbled feta cheese (or goat cheese)
1/4 cup roasted nuts (e.g., almonds, walnuts, or pecans)
1/4 cup dried cranberries or raisins
1 avocado, diced
1/2 cup cooked quinoa or couscous (optional, for added protein)
For the Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar (or apple cider vinegar)
1 tsp Dijon mustard
1 tsp honey or maple syrup (optional for sweetness)
Salt and pepper, to taste
