These Cheddar Jalapeño Corn Fritters are crispy, cheesy, and loaded with sweet corn and spicy jalapeños—pan-fried to golden perfection and served with a cool, zesty lime crema. Perfect as a snack, appetizer, or brunch side dish!

Ingredients:
For the Fritters:

1 ½ cups fresh, canned, or thawed frozen corn

1 cup shredded sharp cheddar cheese

1–2 jalapeños, finely chopped (seeds removed for less heat)

½ cup all-purpose flour

1 egg

2 tbsp chopped green onions or chives

1 tsp baking powder

½ tsp garlic powder

Salt & pepper to taste

2–3 tbsp milk (as needed for batter consistency)

Oil for frying (vegetable or avocado oil)

For the Lime Crema:

½ cup sour cream or Greek yogurt

Zest and juice of 1 lime

Salt to taste

1 tbsp chopped cilantro (optional)
