Roasted Hasselback Beets with Fresh Dill Dressing

Ingredients:
4 medium beets, peeled and trimmed
2 tbsp olive oil
Salt and pepper to taste
1/2 cup Greek yogurt
1 tbsp fresh dill, chopped
1 tsp lemon juice
1/2 tsp honey
1 clove garlic, minced
Directions:
