1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup buttermilk
1/4 cup pineapple juice (from the drained pineapple)

2 tablespoons unsalted butter
1/4 cup heavy cream
1/4 cup brown sugar
1 tablespoon maple syrup or honey
How to Make
Step 1: Prepare the Pineapple Topping
Preheat your oven to 350°F (175°C).
In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and maple syrup (or honey), and cook for 2-3 minutes until it forms a smooth, thick caramel.
Pour the caramel mixture into the bottom of a greased 9-inch round cake pan.
Arrange the pineapple slices in the caramel sauce, placing them evenly around the pan. Place a maraschino cherry in the center of each pineapple ring if desired.
Step 2: Make the Cake Batter
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
