Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, cream together the butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy, about 2-3 minutes.

Add Wet Ingredients: Beat in the egg and vanilla extract, mixing until fully incorporated.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Fold in Apples and Extras: Gently fold in the chopped apple, walnuts (if using), and raisins (if using).

Shape Cookies: Drop spoonfuls of dough (about 1 1/2 tablespoons each) onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake for 12-15 minutes, or until the edges of the cookies are golden brown and the centers are set.

Cool and Serve: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
