Zucchini Rolls Stuffed with Ham and Cheese

In a mixing bowl, combine the cream cheese with a tablespoon of chopped fresh parsley and a pinch of salt. Mix until smooth and spreadable.

Slice the cooked ham into strips or, if you’re using vegetables or tomatoes, slice them thinly.

Assemble the Rolls:

Lay a zucchini strip flat on a clean surface. Spread a small amount of the cream cheese mixture on the zucchini.

Place a strip of egg mixture and a slice of ham (or your chosen filling) on top of the cream cheese.

Carefully roll up the zucchini around the filling, securing it tightly.

Serve:

Place the zucchini rolls on a serving platter. Garnish with more chopped parsley.

Serve immediately as a light meal or appetizer!
