Zucchini Pizza Bites – A Low-Carb, Flavor-Packed Snack

Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

2. Season the Zucchini
Place the zucchini slices on the prepared baking sheet. Brush both sides of the zucchini rounds with olive oil, and sprinkle with garlic powder, Italian seasoning, salt, and pepper.

3. Pre-Bake
Bake the zucchini rounds for 5-7 minutes to soften them slightly, ensuring they won’t get too soggy once the toppings are added.

4. Add Toppings
Remove the zucchini from the oven. Top each zucchini slice with a small spoonful of marinara sauce, a sprinkle of shredded mozzarella, mini turkey pepperoni (or diced chicken ham), and Parmesan cheese (if using).

5. Bake Again
Return the zucchini bites to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

6. Garnish & Serve
Once baked, sprinkle with fresh basil or parsley for a burst of color and added flavor. Serve warm and enjoy!
