Zucchini and Vegetable Patties

Grate the zucchini and sprinkle with 1 teaspoon of salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the grated zucchini with your hands or a clean kitchen towel to remove the liquid.

2️⃣ Prepare the Mixture:
In a large bowl, combine the drained zucchini, grated carrot, chopped onion (if using), eggs, breadcrumbs, Parmesan cheese, minced garlic, oregano, salt, and pepper. Mix everything together until well combined. If the mixture seems too wet, add more breadcrumbs to firm it up.

3️⃣ Form Patties:
Take small portions of the mixture and shape them into patties, about 2-3 inches in diameter.

4️⃣ Fry the Patties:
Heat a few tablespoons of olive oil in a skillet over medium heat. Once hot, add the patties and cook for 3-4 minutes on each side, or until golden and crispy. Be sure not to overcrowd the pan.

5️⃣ Drain and Serve:
Once cooked, remove the patties from the skillet and drain them on paper towels. Serve immediately.
