Zucchini and Puff Pastry Bites – A Quick and Tasty Appetizer

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Prepare the Zucchini
In a pan, heat the olive oil over medium heat. Add the sliced zucchini and cook for about 2-3 minutes, just until they soften a little. You don’t want them to become too soft, as they’ll cook more in the pastry. Season with garlic powder, oregano, salt, and pepper. Remove from heat and set aside to cool slightly.
Step 3: Prepare the Puff Pastry
Roll out the puff pastry sheet on a lightly floured surface. Cut it into small squares or rectangles (about 2 inches by 2 inches).
Step 4: Assemble the Bites
Place a few pieces of the sautéed zucchini in the center of each puff pastry square.
If desired, sprinkle Parmesan cheese on top for extra flavor.
Step 5: Bake
If using an egg wash, beat the egg and lightly brush the edges of the pastry squares for a golden finish.
Bake in the preheated oven for about 12-15 minutes, or until the pastry is golden and puffed up.
Step 6: Serve
Garnish with some fresh parsley and serve warm!
