Zesty Paprika and Dijon Mustard Chicken Thighs

Preheat your oven to 400°F (200°C).

Prepare the Marinade:
In a medium bowl, combine Dijon mustard, smoked paprika, minced garlic, lemon juice, olive oil, salt, and pepper. Mix thoroughly to create a smooth marinade.

Coat the Chicken:
Rub the marinade generously over the chicken thighs, ensuring an even coat on both sides. Let the chicken sit for about 15-20 minutes to absorb the flavors.

Bake the Chicken:
Arrange the marinated chicken thighs on a baking tray or in a skillet, skin side up. Bake for 35-40 minutes, basting occasionally with the pan juices to keep the chicken moist. The chicken is done when the skin is golden brown, and the internal temperature reaches 165°F (74°C).

Finish:
Once cooked, remove from the oven and garnish with fresh parsley or thyme for an extra pop of color and flavor.
