Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
Season & Simmer: Add the taco seasoning and diced tomatoes with green chiles (do not drain). Stir and let simmer for 5 minutes.
Fill the Shells: Spoon the seasoned taco meat into each phyllo tart shell, filling them generously.
Add Cheese & Bake: Sprinkle shredded cheddar cheese over each bite. Bake for 5–7 minutes, or until the cheese is melted and bubbly.
Drizzle with Ranch: Remove from the oven and drizzle ranch dressing over the warm taco bites before serving.
