Preheat your oven to 400°F (200°C).
Arrange the frozen tater tots in a single layer on a baking sheet. Drizzle with olive oil for extra crispiness, if desired.
Bake according to the package instructions, usually around 20-25 minutes, or until golden and crispy. Flip them halfway through for even crispness.
Make the Sausage Gravy:
While the tater tots are cooking, heat a large skillet over medium heat and crumble the breakfast sausage into the pan. Cook until browned and fully cooked through, about 8-10 minutes.
Remove the sausage from the pan and set aside, leaving some of the fat in the skillet.
Add the butter to the skillet and let it melt. Stir in the flour and cook for about 1 minute to form a roux.
Gradually pour in the milk while whisking constantly to prevent lumps. Cook for another 3-4 minutes, allowing the mixture to thicken into a gravy.
Stir in garlic powder, salt, pepper, and red pepper flakes (if using). Add the cooked sausage back into the gravy and simmer for another 2-3 minutes to combine.
Assemble the Breakfast Bowl:
Once the tater tots are crispy and the sausage gravy is ready, place the baked tater tots in a bowl.
Pour a generous amount of sausage gravy over the tater tots, ensuring they’re fully covered.
Sprinkle shredded cheddar cheese on top while the gravy is still hot, allowing it to melt into a gooey, cheesy layer.
Serve:
Garnish with fresh herbs like parsley or chives, if desired, for a touch of color and freshness. Serve hot and enjoy the comforting, indulgent breakfast!
