Wholesome Banana Carrot Loaf: Moist, Sweet & Gently Spiced

Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.

Mix Wet Ingredients:
In a large bowl, whisk together the mashed bananas, eggs, brown sugar, vegetable oil, and vanilla extract until smooth and combined.

Add Carrots and Raisins:
Stir in the grated carrots and raisins.

Combine Dry Ingredients:
In a separate bowl, mix the flour, baking soda, baking powder, salt, and cinnamon. Add this mixture to the wet ingredients and stir until just combined—do not overmix.

Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
