Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
Make the Crust:
Mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture firmly into the bottom of the pan. Bake for 8-10 minutes and then let it cool.
Prepare the Cheesecake Filling:
Beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, strawberry puree, vanilla extract, and flour until fully combined.
Bake the Cheesecake:
Pour the cheesecake batter over the cooled crust and bake for 55-60 minutes, or until the center is set but slightly jiggly. Allow the cheesecake to cool completely.
Prepare the Strawberry Topping:
Toss the sliced strawberries with sugar and chill them in the fridge until ready to serve.
Assemble & Serve:
Once the cheesecake has cooled, top it with the chilled strawberry topping before serving.
