Veggie Omelette – A Quick and Healthy Breakfast to Kickstart Your Day!

Chop the bell peppers, onions (if using), and spinach.

Whisk the Eggs:
In a bowl, beat the eggs with a pinch of salt and pepper.

Sauté the Veggies:
Heat olive oil or butter in a pan over medium heat. Add bell peppers (and onions, if using) and sauté for 2-3 minutes until softened. Add spinach and cook for another minute until wilted.

Cook the Omelette:
Pour the beaten eggs over the veggies in the pan, tilting the pan to spread evenly. Let it cook for 2-3 minutes until the edges set.

Add Cheese (Optional):
Sprinkle shredded cheese on one half of the omelette (if desired).

Fold & Serve:
Carefully fold the omelette in half and cook for another minute until fully set.

Enjoy!
Serve hot with toast, avocado, or a side salad.
