Vegan Zucchini Bacon Style Strips – Smoky Flavor

Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper for easy cleanup.
2️⃣ Prepare the Marinade
In a large bowl, whisk together the olive oil, soy sauce (or tamari), maple syrup, smoked paprika, garlic powder, and black pepper until fully combined.
3️⃣ Coat the Zucchini
Add the zucchini slices to the bowl and toss them thoroughly to ensure they are evenly coated with the marinade.
4️⃣ Arrange on Baking Sheet
Lay the zucchini slices in a single layer on the prepared baking sheet, making sure they aren’t overlapping to ensure even baking.
5️⃣ Bake
Bake in the preheated oven for 20-25 minutes, flipping the slices halfway through, until the zucchini is crispy and slightly browned. Keep an eye on them as they can burn easily, especially towards the end.
6️⃣ Cool and Serve
Remove from the oven and let the zucchini bacon strips cool slightly. They will crisp up even more as they cool.
