This Vegan Lemon Curd is a tangy and creamy alternative to traditional lemon curd, made without eggs or dairy. Perfect for spreading on toast, drizzling over pancakes, or filling pastries!

Ingredients:
1/2 cup fresh lemon juice (about 2-3 lemons)

1 tbsp lemon zest (from 1 lemon)

1/4 cup coconut milk (or any plant-based milk)

1/2 cup granulated sugar (or preferred sweetener)

2 tbsp cornstarch (for thickening)

1/4 tsp turmeric (for color, optional)

2 tbsp vegan butter or coconut oil (for richness)

Pinch of salt
