2. In a large bowl, combine flax seeds, chia seeds, sunflower seeds, pumpkin seeds, salt, garlic powder, and onion powder (if using).
3. Add olive oil and water to the dry ingredients. Stir well until everything is thoroughly combined and a thick, slightly gooey mixture forms. Let it sit for 5-10 minutes to allow the chia and flax seeds to absorb the liquid and thicken the mixture.
4. Spread the mixture evenly onto the prepared baking sheet. For thinner crackers, spread it very thinly. You can place another piece of parchment paper on top and use a rolling pin to get it even and thin.
5. Bake for 60-75 minutes, or until the crackers are golden brown and crisp. The baking time may vary depending on how thin you spread the mixture and your oven. Check them after 45 minutes and keep an eye on them to prevent burning.
6. Once baked, turn off the oven and leave the oven door slightly ajar. Let the crackers cool completely in the oven to crisp up further. This can take about 1-2 hours.
7. Once completely cool and crisp, break the large sheet into cracker-sized pieces.
8. Store in an airtight container at room temperature for up to a week.
