Ultimate Mixed Grill Platter with Crispy Fries

In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
Rub this marinade over the pork ribs, beef sausages, chicken thighs, and pork belly strips. Let the meat marinate for at least 30 minutes to an hour for maximum flavor.
Step 2: Prepare the Fries
Preheat your oven to 400°F (200°C).
Toss the cut potatoes in vegetable oil and season with salt and optional paprika or garlic powder.
Spread the fries evenly on a baking sheet and bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.
Step 3: Grill the Meat
Preheat your grill to medium-high heat.
Grill the pork ribs, sausages, chicken thighs, and pork belly strips for about 15-20 minutes, turning occasionally to ensure the meat is cooked through and has nice grill marks. Check the internal temperature to ensure it reaches 165°F (74°C) for chicken and 145°F (63°C) for pork.
Step 4: Make the Dipping Sauce
In a small bowl, mix mayonnaise, ketchup, paprika, and lemon juice.
Add hot sauce if you like it spicy, and stir until smooth.
Step 5: Serve and Enjoy
Serve the grilled meats on a large platter alongside the crispy fries.
Garnish with fresh herbs (optional), and serve with the dipping sauce on the side.
