Tremendous Garlic Chicken Fried Rice: A Flavor-Packed, Quick and Easy Dish

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set it aside.
Sauté the Garlic and Vegetables:

In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and chopped onion, and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
Add the mixed vegetables and cook for another 2-3 minutes until the vegetables are tender. You can use fresh or frozen vegetables depending on your preference.
Scramble the Eggs:

Push the garlic and vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked, about 2 minutes. Once the eggs are cooked, stir them into the vegetable mixture.
Combine with Rice:

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir everything together, making sure the rice is well mixed with the garlic, vegetables, and eggs.
Add the Seasonings:

Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat the rice with the sauces. Taste and adjust the seasoning with salt, pepper, or more soy sauce if needed.
Finish with Chicken:

Return the cooked chicken to the skillet and stir to combine. Cook everything together for an additional 2-3 minutes until everything is heated through.
Serve:

Serve the Tremendous Garlic Chicken Fried Rice hot, garnished with chopped green onions and a sprinkle of red pepper flakes if you like some spice.
