Ingredients
For the Broth:

1 kg (2.2 lbs) beef on the bone (e.g., beef shank or bone-in brisket)

3 liters (12 cups) water

Salt, to taste

For the Soup:

1 kg (2.2 lbs) sauerkraut (drained and rinsed if too sour)

250 g (2 medium carrots), peeled and grated or finely chopped

2 medium onions (150 g), chopped

2 tablespoons vegetable oil (for sautéing)

1 tablespoon tomato paste (optional for added richness)

1-2 bay leaves

Fresh dill, for garnish (optional)
