How to Preserve Leeks
1. Cleaning and Preparing:
Slice off root ends and tough green tops.
Rinse thoroughly under running water and soak in a bowl of water to remove dirt.
Save green tops for stock if desired.
2. Blanching for Longevity:
Boil a large pot of water and prepare a bowl of ice water.
Cut leeks into rings or long strips.
Blanch in boiling water for 30 seconds to 1 minute.
Transfer to ice water immediately to stop cooking.
3. Freezing for Convenience:
Dry leeks thoroughly with a clean kitchen towel or paper towels.
Spread on a baking sheet in a single layer and freeze for a few hours.
Transfer to airtight bags or containers and label with the date.
Frozen leeks can last for several months.
4. Using Preserved Leeks:
Add frozen leeks directly to soups, stews, or stir-fries without thawing
