In a large bowl, beat the butter with the powdered sugar until you get a creamy and smooth mixture.
Add the egg yolks one by one, mixing well after each addition. Add the vanilla extract as well.
In another bowl, sift together the flour, cornstarch, baking powder, and salt. Gradually incorporate the dry ingredients into the butter and egg mixture, stirring with a spatula until the dough is smooth and homogeneous.
Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Shape the alfajores:
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
Roll out the dough on a floured surface until it’s about 5 mm thick.
Use a round cookie cutter (or any shape you prefer) to cut out the alfajores. Place the dough circles on the prepared baking sheet.
Bake for 8 to 10 minutes or until the edges of the alfajores are lightly golden. Let them cool completely.
Fill the alfajores:
Once cooled, spread a generous layer of dulce de leche on one of the alfajores and top with another alfajor, making a sandwich.
Make sure the filling is evenly spread, and the alfajores stay together.
Dust with powdered sugar:
Once the alfajores are assembled, lightly dust them with powdered sugar for a snowy finish.
