Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased.
Drizzle a bit of olive oil over the salmon fillets and season with lemon pepper, Cajun spice, smoked paprika, and salt.
Make the Crab Stuffing:
In a medium bowl, combine the crab meat, mayonnaise, mustard, lemon juice, hot sauce, Old Bay seasoning, and Cajun seasoning. Stir until well mixed.
If using canned crab, make sure it’s drained well and flaked into smaller pieces.
Stuff the Salmon:
Carefully slice a pocket into the side of each salmon fillet, being careful not to cut all the way through.
Stuff the pocket with the crab mixture, pressing gently to pack the stuffing in.
Bake the Stuffed Salmon:
Place the stuffed salmon fillets on the prepared baking sheet and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The stuffing should be golden and bubbly.
Serve and Enjoy:
Once the salmon is cooked, remove it from the oven and serve immediately with your favorite side dishes like steamed vegetables, rice, or a light salad.
