Prepare the Chickpeas: If using canned chickpeas, rinse them under cold water and drain well. If you’re using cooked chickpeas, ensure they are well-drained.
Combine Ingredients: In a food processor, add the chickpeas, tahini, lemon juice, garlic, ground cumin, and salt.
Blend Until Smooth: Process the ingredients until the mixture starts to come together but still has some texture. Scrape down the sides of the bowl as needed to make sure everything is evenly combined.
Add Ice Water: With the processor running, slowly add 2 to 3 tablespoons of ice water, a little at a time, until the hummus reaches a creamy, smooth consistency.
Finish with Olive Oil: Once the hummus is smooth, add the extra virgin olive oil and blend again until fully incorporated. Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
Serve: Transfer the hummus to a serving bowl, drizzle with a little extra olive oil, and sprinkle with some paprika, cumin, or chopped parsley for garnish. Serve immediately or refrigerate until ready to enjoy.
