Hawaiian Carrot Pineapple Cake

Preheat your oven to 350°F (175°C).

Grease a 9×13-inch baking pan or line it with parchment paper.

Mix Dry Ingredients:

In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon.

Combine Wet Ingredients:

In another bowl, beat the eggs and oil together.

Stir in the grated carrots, drained pineapple, and walnuts (if using).

Combine and Bake:

Add the wet ingredients to the dry ingredients and mix until just combined.

Pour the batter into the prepared pan and spread evenly.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Frosting:

While the cake cools, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.

Frost & Serve:

Once the cake has fully cooled, spread the frosting evenly over the top.
