In a large ovenproof skillet, heat the olive oil over medium-high heat. Season the pork tenderloin with salt and pepper, then sear the tenderloin in the skillet for 2-3 minutes per side, until golden brown. Remove the pork from the skillet and set it aside.
In the same skillet, add the sliced onions and sauté for 5-7 minutes, until they soften and turn golden brown.
Add the minced garlic and fresh thyme to the onions, and cook for an additional minute, until fragrant.
Pour in the balsamic vinegar and chicken broth, stirring to combine. Bring the mixture to a simmer.
Return the pork tenderloin to the skillet, spooning some of the onion and sauce mixture over the top. Transfer the skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
Once the pork is done, remove it from the oven and let it rest for 5 minutes before slicing.
Serve the sliced pork with the golden onions and balsamic sauce spooned over the top.
