Begin by cooking the pasta according to the package instructions. Drain and set aside.
Prepare the Beef:
Season the beef with salt and pepper. Heat a bit of olive oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the butter. Once melted, add the chopped onion and cook for 2-3 minutes until softened. Add the sliced mushrooms and garlic, and cook for an additional 3-4 minutes until the mushrooms release their moisture and become tender.
Make the Sauce:
Sprinkle the flour over the cooked vegetables and stir to combine. Cook for 1 minute to eliminate the raw flour taste. Gradually pour in the beef broth, stirring constantly until the mixture thickens, about 3-4 minutes.
Add the Beef and Seasoning:
Return the cooked beef to the skillet. Stir in the mustard, sour cream, and Worcestershire sauce. Allow the sauce to simmer for 5-7 minutes, until it’s rich and creamy. Season with additional salt and pepper to taste.
Combine with Pasta:
Add the cooked pasta to the skillet and toss to coat it in the creamy beef sauce.
Serve:
Garnish the pasta with fresh parsley and serve hot.
