Sweet Potato & Spinach Bake

Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized oven-safe dish with cooking spray or a little oil.

Prepare the Sweet Potatoes:
Peel and slice the sweet potatoes into thin rounds (about ¼-inch thick). Arrange them evenly in the prepared baking dish.

Sauté the Spinach:
Heat a large pan over medium heat. Add the spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.

Prepare the Egg Mixture:
In a medium bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Stir in the crumbled feta cheese if using.
