Sweet Hawaiian Crockpot Chicken: A Tropical Flavor Explosion

Spray the inside of your crockpot with non-stick spray or lightly coat with olive oil.
Combine the Ingredients:

Place the chicken breasts in the bottom of the crockpot.
In a separate bowl, combine the drained pineapple, soy sauce, brown sugar, rice vinegar, garlic, and ginger (if using). Mix well until the sugar is dissolved.
Cook the Chicken:

Pour the pineapple sauce mixture over the chicken in the crockpot.
Cover and cook on low for 4-6 hours, or until the chicken is cooked through and tender.
Thicken the Sauce (Optional):

If you prefer a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry.
After the chicken is done cooking, remove the chicken breasts from the crockpot and set aside.
Stir the cornstarch mixture into the sauce in the crockpot. Cover and cook on high for an additional 15-20 minutes until the sauce thickens.
Serve:

Shred the chicken with two forks and return it to the sauce. Stir to coat the chicken in the flavorful sauce.
Serve the Sweet Hawaiian Crockpot Chicken over cooked white rice, and garnish with sliced green onions for a pop of color and freshness.
