Sweet Funnel Cake Bites with Powdered Sugar: A Fun Twist on a Fair Favorite

In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs and then mix in the milk and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until you have a thick, smooth batter.
Heat the Oil:

In a large, deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil. If it sizzles immediately, the oil is ready.
Fry the Funnel Cake Bites:

Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry the bites in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy.
Use a slotted spoon to remove the funnel cake bites from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Once all the funnel cake bites are fried and drained, generously dust them with powdered sugar.
