Sweet and Spicy Crispy Chicken Bites

Prepare the Chicken Bites:

In a medium bowl, mix the flour, baking powder, garlic powder, paprika, salt, and pepper.

In a separate bowl, combine the beaten egg and buttermilk.

Dredge the chicken pieces in the flour mixture, then dip them into the egg mixture, followed by the panko breadcrumbs. Ensure each piece is coated evenly.

Fry the Chicken:

Heat vegetable oil in a large pan over medium-high heat (about 350°F or 175°C).

Fry the chicken in batches for about 4-5 minutes per batch, or until golden brown and crispy. Remove from the oil and place on a paper towel-lined plate to drain excess oil.

Prepare the Sweet and Spicy Sauce:

In a small saucepan over medium heat, combine the honey, soy sauce, sriracha, rice vinegar, grated ginger, and minced garlic.

Bring to a simmer and cook for about 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

Toss the Chicken in the Sauce:

Place the crispy chicken bites in a large mixing bowl. Pour the sweet and spicy sauce over the chicken and toss to coat evenly.

Serve:

Transfer the coated chicken bites to a serving plate, and serve hot with your favorite dipping sauce or sides like steamed rice or a fresh salad.
