Sugar-Free Energy Dessert – A Sweet, Healthy Boost!

Prepare the Ingredients:
In a food processor, pulse the almonds until they are finely chopped (but not ground into a powder). Add the chia seeds, flaxseeds, shredded coconut, and cocoa powder to the food processor, and pulse again until everything is well combined.

Mix the Wet Ingredients:
In a small bowl, combine the peanut butter, melted coconut oil, vanilla extract, and sweetener. Stir until smooth.

Combine:
Add the wet ingredients to the dry ingredients and pulse in the food processor until everything sticks together. If the mixture is too dry, add 1 tablespoon of water at a time until it becomes sticky enough to form into balls.

Form the Energy Bites:
Roll the mixture into small bite-sized balls, about 1 inch in diameter. You should get around 12-14 bites, depending on the size.

Chill:
Place the energy bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.
