Stuffed Chicken Fillets with Mediterranean Vegetables and Cheese

Step 1: Prepare the Chicken
Marinate the Chicken:

In a bowl, mix olive oil, black pepper, red pepper, oregano, and dried garlic.

Coat the chicken fillets with the mixture and let them marinate for 10-15 minutes.

Slice for Stuffing:

Using a sharp knife, make a deep pocket in each chicken fillet without cutting all the way through.

Step 2: Make the Stuffing
Sauté the Vegetables (Optional):

Heat a small pan over medium heat and sauté bell peppers, zucchini, sun-dried tomatoes, and olives for 3-4 minutes until slightly softened.

Add thyme and basil, then remove from heat.
