Strawberry Cream Cheese Icebox Cake: A Refreshing No-Bake Delight

In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the powdered sugar, vanilla extract, and lemon juice (if using) to the cream cheese, and continue mixing until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a light and airy filling.
Step 2: Assemble the Icebox Cake

Line the bottom of a 9×9-inch or 8×8-inch square baking dish with a layer of graham crackers.

Step 3: Chill the Cake

Cover the dish with plastic wrap or foil and refrigerate the cake for at least 4 hours, or preferably overnight. This allows the flavors to meld together and the graham crackers to soften, creating a cake-like texture.
