Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions, typically 8-10 minutes, until al dente.
Drain the pasta, reserving about 1/2 cup of pasta water. Set the pasta aside.
Cook the Steak Bites:
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
Season the steak cubes with salt and pepper, then add them to the hot skillet in a single layer.
Sear the steak bites for 2-3 minutes on each side, or until they reach your desired level of doneness.
Remove the steak from the skillet and set aside. Keep any juices in the pan for the sauce.
Make the Garlic Butter Sauce:
In the same skillet, reduce the heat to medium and melt the butter.
Add the minced garlic and red pepper flakes (if using), and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
If the sauce needs thinning, add a bit of the reserved pasta water, a tablespoon at a time, to reach your desired consistency.
Combine the Pasta and Steak:
Add the cooked fettuccine pasta to the skillet with the garlic butter sauce, tossing gently to coat the pasta evenly.
Stir in the steak bites and Parmesan cheese, then toss again to combine everything.
If desired, drizzle with fresh lemon juice for a burst of flavor and garnish with chopped parsley.
Serve:
Plate the steak bites and fettuccine, garnishing with extra Parmesan cheese and parsley if desired. Serve hot and enjoy!
