Prepare the Vegetables:

Grate the potatoes and squeeze out excess moisture using a clean kitchen towel or paper towels.
In a pan, sauté the chopped onion in a little vegetable oil over medium heat until soft and golden, about 5 minutes. Add the spinach and cook for another 2-3 minutes until wilted. Remove from heat and set aside.
