Spicy Roast Duck with Orange Glaze

Preheat the oven to 375°F (190°C).

Pat the duck dry with paper towels. This helps achieve a crispy skin.

Rub the duck with olive oil, then season it generously with salt, pepper, paprika, chili powder, garlic powder, cumin, coriander, cayenne pepper, and any other spices you like. Don’t forget to rub the seasoning inside the cavity of the duck as well.

Stuff the cavity with the orange quarters.

Roast the Duck:

Place the duck on a roasting rack in a roasting pan, breast-side up.

Roast the duck for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C). Occasionally baste the duck with its own juices or some of the fat that accumulates at the bottom of the pan. This will keep it moist and help the skin crisp up.

Make the Orange Glaze:

While the duck is roasting, make the glaze. In a small saucepan, combine the orange juice, zest, honey, soy sauce, rice vinegar, ginger, and chili flakes (if using).

Bring the mixture to a simmer over medium heat, then reduce the heat and let it cook for about 10-15 minutes, or until the glaze thickens slightly. Stir occasionally to prevent burning.

Taste the glaze and adjust the seasoning with a pinch of salt if necessary.

Glaze the Duck:

About 15-20 minutes before the duck is finished roasting, brush the glaze generously over the duck. Continue roasting the duck, basting it with the glaze every 5 minutes until the duck skin is golden brown and crispy.

Rest and Serve:

Once the duck is fully roasted, remove it from the oven and let it rest for 10 minutes before carving. This helps the juices redistribute.

Slice the duck and serve with the remaining orange glaze on the side for dipping.

Serving Suggestions:
Serve the spicy roast duck with a side of roasted vegetables, mashed potatoes, or rice pilaf.

For a lighter side, a fresh salad with citrus dressing or sautéed greens pairs wonderfully with this rich dish.

Tips:
If you prefer a more intense glaze, you can simmer it down further to create a thicker consistency.

For extra crispy skin, try flipping the duck halfway through roasting to ensure even crisping.

This dish is a perfect combination of spicy, sweet, and savory flavors that will have your guests coming back for seconds!
