Spicy Chicken Avocado Grilled Cheese

Cook the Chicken: Heat olive oil in a pan over medium heat. Season the chicken breast with paprika, chili powder, garlic powder, salt, and black pepper. Cook for about 6-7 minutes per side, or until fully cooked. Remove from heat, squeeze lime juice over the chicken, and shred it into bite-sized pieces.

Prepare the Bread: Spread butter on one side of each bread slice.

Assemble the Sandwich: On the unbuttered side of two slices, layer cheddar cheese, shredded chicken, avocado slices, cilantro, and salsa verde if using. Top with mozzarella cheese and place the remaining bread slices on top, buttered side facing up.

Grill the Sandwich: Heat a skillet over medium-low heat. Place the sandwiches in the pan and cook for about 3-4 minutes per side, or until golden brown and crispy, and the cheese has melted.

Serve: Remove from the skillet, let it cool for a minute, then slice and enjoy!
