Spicy Cheesy Blackened Chicken Nachos: A Flavor Explosion

Preheat your oven broiler to high to melt the cheese perfectly.
Season the Chicken:

In a large bowl, toss the cubed chicken with Cajun seasoning, garlic powder, chili powder, red chile flakes, and hot sauce until evenly coated.
Cook the Chicken:

Heat a large cast iron skillet over high heat. Add the seasoned chicken and cook for 10-15 minutes, stirring occasionally until fully cooked. The chicken should reach an internal temperature of 165°F (74°C). If needed, cook in batches to avoid overcrowding the skillet.
Once cooked, remove the chicken from the skillet and set aside.
Prepare the Veggies:

In the same skillet, add the diced onion, roma tomatoes, corn, and jalapeños. Season with Cajun seasoning to taste.
Sauté the vegetables until softened, about 5 minutes.
Combine Chicken and Veggies:

Return the cooked chicken to the skillet and mix with the softened veggies. Stir until well combined.
Top with Cheese and Salsa:

Sprinkle the chicken-vegetable mixture with shredded pepper jack cheese and drizzle with salsa.
Broil the skillet in the oven until the cheese is melted and bubbly, about 3-5 minutes.
Garnish and Serve:

Garnish with fresh tortilla chips, sour cream, and chopped fresh basil.
Serve immediately for a hot, cheesy, spicy treat!
