In the same skillet, add the diced onion, roma tomatoes, corn, and jalapeños. Season with Cajun seasoning to taste.
Sauté the vegetables until softened, about 5 minutes.
Combine Chicken and Veggies:
Return the cooked chicken to the skillet and mix with the softened veggies. Stir until well combined.
Top with Cheese and Salsa:
Sprinkle the chicken-vegetable mixture with shredded pepper jack cheese and drizzle with salsa.
Broil the skillet in the oven until the cheese is melted and bubbly, about 3-5 minutes.
Garnish and Serve:
Garnish with fresh tortilla chips, sour cream, and chopped fresh basil.
