Spicy Alabama Firecracker Bites: Bold, Zesty Flavor in Every Bite

Soak the chicken: Place the chicken pieces in a bowl and cover with buttermilk. Let them soak in the fridge for at least 30 minutes, or up to 2 hours, to tenderize and add flavor.
Step 2: Coat the Chicken
Prepare the coating: In a shallow bowl, mix the flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
Coat the chicken: After the chicken has marinated, remove each piece from the buttermilk, letting any excess drip off. Dredge the chicken pieces in the flour mixture, pressing lightly to coat them evenly.
Step 3: Fry the Chicken
Heat the oil: In a deep skillet or fryer, heat 2 inches of vegetable oil over medium-high heat. Test the oil temperature by dropping a small piece of bread into the oil—if it sizzles immediately, the oil is ready.
Fry the chicken: Working in batches, fry the chicken pieces for 3-4 minutes, or until golden brown and crispy. Use a slotted spoon to remove the chicken and place it on a paper towel-lined plate to drain excess oil.
Step 4: Make the Firecracker Sauce
Prepare the sauce: In a small saucepan, melt the butter over medium heat. Add the hot sauce, white vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, and honey (if using). Stir well and simmer for 2-3 minutes until the sauce is smooth and slightly thickened.
Step 5: Coat and Serve
Coat the chicken: Once the chicken pieces are fried and drained, place them in a large bowl. Pour the hot firecracker sauce over the chicken and toss gently to coat the pieces evenly.
Serve: Serve immediately, garnished with chopped green onions or cilantro, if desired. These spicy bites are perfect on their own or paired with a cooling dipping sauce, like ranch or blue cheese dressing.
