Smothered Pork Chop Scalloped Potato Casserole

Preheat oven to 350°F (175°C).
Season the pork chops with salt and pepper.
2. Brown the Pork Chops:

Heat oil in a skillet over medium-high heat. Brown pork chops on both sides until golden brown, about 3-4 minutes per side. Set aside.
3. Make the Sauce:

In the same skillet, cook onions and garlic until translucent, about 3 minutes.
Add flour to the skillet to make a roux. Stir for 1 minute until the mixture is smooth.
Gradually add milk and chicken broth, stirring constantly until the sauce thickens. Remove from heat.
4. Layer the Casserole:

In a greased casserole dish, layer half the sliced potatoes.
Pour half of the sauce over the potatoes, followed by half of the shredded cheddar cheese.
Repeat with the remaining potatoes, sauce, and cheese. Sprinkle the top with paprika.
5. Add the Pork Chops:

Place the browned pork chops on top of the potato layers.
6. Bake:

Cover the casserole dish with foil and bake for 1 hour.
After 1 hour, remove the foil and bake for an additional 15-20 minutes until the pork chops are tender and the potatoes are fully cooked.
7. Let It Rest:

Let the casserole sit for 10 minutes before serving.
8. Garnish and Serve:

Garnish with freshly chopped parsley before serving.
