Smoky Lemon Garlic Oysters: A Bold and Flavorful Twist on a Classic Delicacy

Preheat your grill to medium-high heat. If you’re using a gas grill, set the burners to medium-high; for a charcoal grill, make sure the coals are hot and glowing.
Prepare the Lemon Garlic Sauce:

In a small bowl, combine the melted butter, minced garlic, fresh lemon juice, lemon zest, smoked paprika, cayenne pepper (if using), salt, and pepper. Stir well to combine.
Arrange the Oysters on the Grill:

Place the shucked oysters on a grill-safe tray or directly on the grill grates, ensuring they are level so the liquid doesn’t spill out. If using a tray, make sure it’s sturdy enough to hold the oysters without tipping.
Grill the Oysters:

Spoon about 1 teaspoon of the lemon-garlic butter sauce over each oyster.
Grill the oysters with the lid closed for 5-7 minutes, or until the oysters are hot, and the edges of the shells begin to curl. You should see the butter bubbling and the oysters cooking gently in their own juices.
Serve:

Carefully remove the oysters from the grill.
Garnish with freshly chopped parsley and serve with lemon wedges for an extra burst of citrus.
