Heat olive oil in a large pot or Dutch oven over medium heat.
Add the sliced smoked sausage and cook for 4-5 minutes until browned, stirring occasionally.
Remove the sausage and set it aside. In the same pot, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until the vegetables are softened and fragrant.
Step 2: Cook the Pasta
Add the uncooked pasta to the pot with the vegetables. Stir for a minute to coat the pasta in the flavorful oils.
Add the diced tomatoes (with their juices) and chicken broth to the pot. Stir to combine.
Season with paprika, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and the liquid is absorbed.
Step 3: Combine the Sausage and Cream (Optional)
Return the browned smoked sausage to the pot, stirring it into the pasta mixture.
If desired, add the heavy cream and stir to combine, allowing it to warm through and create a creamy, rich sauce. Adjust the seasoning with salt and pepper as needed.
Step 4: Serve
Once everything is heated through and the pasta is tender, remove from heat.
Garnish with fresh parsley or basil if desired, and serve hot.
