2–3 beef plate ribs (also called dino ribs)

Yellow mustard (as a binder)

Kosher salt & coarse black pepper (for the rub)

Garlic powder, onion powder (optional)

Wood for smoking (oak, hickory, or mesquite)

For the Yellow Rice with Veggies:

1 cup long-grain rice

2 cups chicken or vegetable broth

1 tsp turmeric or saffron (for color)

1 tbsp olive oil or butter

1 garlic clove, minced

1/4 cup diced onions
