In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Add the bite-sized pieces of beef steak and brown them on all sides, about 5-7 minutes. Once browned, remove from the skillet and set aside.
2. Layer the Casserole:
Spray your slow cooker with non-stick cooking spray.
Layer the bottom of the slow cooker with a portion of the thinly sliced potatoes.
Top the potatoes with a layer of browned steak, followed by some diced onion. Repeat the layers, finishing with a layer of potatoes on top.
3. Add Seasonings and Liquid:
Sprinkle garlic powder, onion powder, salt, and pepper evenly over the layers.
Pour beef broth over the casserole to help cook the potatoes and beef as it simmers.
4. Cook in the Slow Cooker:
Cover and cook on low for 6-7 hours, or until the potatoes are tender and the beef is cooked through.
For the last 30 minutes of cooking, sprinkle the shredded cheddar cheese over the top, allowing it to melt into the casserole.
5. Serve:
Once the casserole is done, give it a quick stir and serve hot. Garnish with fresh herbs if desired.
