Cook the Chicken:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
Add the Queso:
About 30 minutes before serving, shred the chicken directly in the slow cooker using two forks. Stir in the queso dip and let it heat through for the remaining cook time.
Assemble the Tacos:
Warm the tortillas in a skillet, microwave, or oven.
Spoon the queso chicken mixture into the tortillas. Top with shredded lettuce, diced tomatoes, shredded cheese, and fresh cilantro, if desired.
